12 large mushroom caps
1/4 lb butter (plus )
1/2 c. bread crumbs
1T parsley
1T chopped onion
1/2 t salt
1/2 t pepper
1 egg lightly beaten
1/2 c Parmesan cheese
Optional add ins:
minced mushroom stems, bacon bits, minced deli ham, grated cheese, 2 T frozen spinach, well wrung out.
Preheat oven to 350*. Generously butter a shallow baking dish. Rinse mushrooms and remove stems. Melt 1 stick butter. Mix bread crumbs, seasonings, egg, and optional ingredients together. Bathe mushroom caps in slightly cooled butter, fill with bread crumb mixture and place in baking pan. Sprinkle Parmesan cheese over tops of mushrooms. Re-heat remaining (or additional) butter and drizzle on top. Bake 15 to 20 minutes.
