This recipe is a favorite when attending pot luck gatherings. It was given to us by a friend who got it from a community cook book. When she gave it to us she did issue a warning which we have found to be true. Once you bring it to a pot luck you will never be able to bring anything else. When others find out you are coming you will hear "Oh, are you bringing those potatoes?"
You have been warned so here it is.
1 medium diced onion
3 cloves minced garlic
2 tbsp vegitable oil
2 lb bag frozen hash browns
2 cups (or more) shredded cheddar cheese
1 can cream of chicken soup
1 8 oz tub of sour cream
Salt and pepper to taste
I cube of butter
1/2 bag crushed potato chips
Put oil in medium skillet
Sauté onion and garlic till soft and translucent . Allow to cool.
Mix all of the ingredients together except for the butter and potato chips. Place the mixture in a casserole dish. Sprinkle the crushed potato chips on top and then pour the melted cube of butter on top. Bake at 350° for 1 hour.
This comes out very rich. We have also found that leftovers are quite decadent fried as hash browns in the morning.
